Liquid Smoke
Liquid smoke is a seasoning that is made when either distilled water is run through the smoke of desirable woods, thus capturing the scent and flavor of the wood, or it is made by capturing the condensed water that is formed when these woods are burned in a condenser and then rapidly cooled. The condensation is collected. Sometimes the resultant fluid is seasoned and/or aged in wood barrels, while other times it is just bottled after filtering out the sediments.
Liquid smoke is used as a flavoring in recipes where you want a smoky flavor without having to actually smoke the food being prepared, or in liquid dishes which you can’t actually smoke. Also, it is used extensively in the preparation of bacon.
